Creative, Healthy Cooking for Vegans

talronnen 229x300 Creative, Healthy Cooking for VegansAlthough I am a meat eater, I have high cholesterol and am always looking for healthier meals to cook.  So, when I was offered the chance to review Tal Ronnen’s (he cooked for Oprah’s 21 day vegan cleanse and also catered Ellen DeGeneres’ and Portia deRossi’s wedding) new cookbook, The Conscious Cook, I looked forward to learning some new, meat-less recipes.

The Conscious Cook is a hard-cover cookbook in four-color, and is even beautiful to just look at.  Not only does Tal include some great recipes, he talks about the nutrients and flavors of many vegetables and grains.  It’s hard to believe that a vegan cookbook can do this – but many of the recipes are absolutely mouth-watering!

My favorites are the salads, which can be incorporated into a meal for non-vegans, and which utilize in-season fruits and vegetables!  These recipes include loads of protein – something that can be difficult to get with a vegetarian or vegan diet.
