Earlier this month, when I met with the nutritionist from Arnold, she recommended that I incorporate more protein in my diet in preparation for the Disney Princess half-marathon. So when I was asked to participate in the I Heart Beef campaign, I thought it was a great way to inspire myself to create delicious and nutritious recipes using beef.
The truth is, my favorite beef recipe is super-simple, but super-delicious. We purchase excellent cuts of Filet Mignon (small but absolutely tasty cuts of steak) and prep them with salt, pepper, and olive oil. Then, we cook them on a stove top first, just searing the surface.
Finally, we put that pan in the oven, set at 350 degrees, until they are perfectly cooked to your liking (we love our steak cooked medium).
I usually make some broccoli with our steak, or perhaps some potatoes (usually baked). SO good!

My question is probably stupid, but … I LOVE BEEF and I cook it quite often, and for the life of me I cannot find a way to enhance the flavor without adding boullion. I have tried ALL KINDS of boullions (not the cheap kinds either, and those with low sodium too). I don’t like the final product taste after using boullion, however, because of the extra sodium. What can I do to enhance the flavor quality AND quantity to make sauces and au jus without adding sodium? Thanks!
When I young my father use to buy grass feed beef for us, we were a meat eating family. I love making rump roast, steaks, swiss steak and beef stew for my family. I learned from their site the health benefits of eating lean beef.

I can make any night seem special to my family, if I take even a leaner, tougher select cut of steak and make it moister and tender by first using an unseasoned meat tenderizer product and sprinkle that lightly on both sides of the steak, then cover it and let it set in the refrigerator for an hour.
Then take the steak out and carefully slice a pocket opening from the side, into the steak (then pita bread). Then I like to stuff the steak with a stuffing (Wonder Light Wheat bread cubed, smart blend spread, chopped onions, celery, mushrooms, garlic).
Then brown both sides in a large frying pan using cooking oil of your choice to coat the steak first.
After browned transfer to a oven safe cooking dish, add half cup of beef stock to pan . Cover the dish with foil. Cook at 350 degrees for about 40 minutes to one hour, or until beef reaches proper doneness for you according to a meat thermometer.
We always have a great roast at Christmas, that is such a tradition. I also did a great order from Omaha through Rue La La and loved it!

As a teenager, my parents grilled beef on the bbq every weekend and we always had a lot of people over. It’s great memories.

Sunday dinner after church is always special with a nice pot roast that has been slow cooking all morning. Hopefully it is a memory my kids will carry on to their families as well. (Plus the Monday night stew that is made from the leftovers makes a delicious and easy meal for a busy night.

My question for Chef Dave Zinno: What is the most versatile LEAN cut of beef?
I am trying to eat more healthy and have cut some kinds of the fatty cuts of beef out of my diet but if I had a great lean cut of beef that I could use for a lot of different dishes I could add a lot of that beef back in.

Grilling steak reminds me of my parents. My grandpa bought us our first gas grill and steaks from Omaha Steaks and we celebrated the birth of my 5th sibling, my sister. Dad did the grilling and we all enjoyed. Dad even made the grilled corn on the cob. HMMM just love steak!

I like beef because it’s very flavorful and there are many different ways of cooking it (so you can never get tired of eating it).

I remember when I was pregnant with my son. My husband always took me out to eat after drs appt and we always ordered the same thing. A big, thick beef burger loaded with mushrooms and bacon. It still makes me smile thinking about it

I think people sometimes confuse the term London broil and use it to name a cut of beef rather than the process used to cook that meat.
What is the best way to use the London broil process so the meat is flavorful and tender?
