I try to eat healthy food, but one of my Achilles heels is Rice Krispie treats. I’m obsessed, as any of my Walt Disney World Moms Panelist BFFs can attest to (I ate a giant one in about one gulp while at Downtown Disney). Yum.
This summer, I’m one of ten brand ambassadors for Rice Krispies, and our responsibility is to each come up with a fabulous recipe following a specific theme. To make things interesting, we weren’t told the theme. Instead each of us received a clue and using only Twitter, we had to put together the clue, which was….
“Fourth of July’s “cooler” when kids help create Rice Krispies Treats recipes!”
You all know what a fabulous baker I am, right? But I’m working on it. So I spent some time coming up with a great recipe. It was going to rock!
But, of course, I couldn’t execute on it, but with the famous words of Tim Gunn in my head (“Make it Work!”), I set out to create a great recipe.
So, without further ado – The Chocolate Rice Krispie Ice Cream Sandwich
Here’s what you’ll need:
- One package of marshmallows
- One block of chocolate to melt
- Three tablespoons of butter
- Two cups of ice cream (softened slightly)
- Three cups of Rice Krispies
- Festive sprinkles
- Optional: fresh fruit (we used strawberries)
Add the butter and chocolate to a saucepan and melt over medium heat.
Slowly add the marshmallows to the pan, until melted.
Remove from heat, and slowly add the Rice Krispies. Fold the Rice Krispies into the melted mixture.
Place on a piece of greased wax paper and roll flat with a rolling pin. Split into two sections.
Grease a small cake pan, and place half of the Rice Krispie treats in the bottom of the pan.
Add the ice cream, letting it melt a bit on the warm Rice Krispie treat mixer. Then place the other half of the Rice Krispie treats on top of the ice cream. Add the sprinkles and fresh fruit.
Place in the freezer to solidify and then serve!

nothing beats the traditional rice krispie treat! Sometimes we have them for dinner.
But when I get real fancy, I add mini m&m’s to the top!
My favorite way to eat a Rice Krispie treat is on a stick, shaped like Mickey Mouse, covered with chocolate and sprinkles at Walt Disney World
I’ve only had the traditional variety, but I’d love to learn some new ways to make them.
I must admit I’m partial to the traditional ones but If I could get some cool receipes to try I will be right in the kitchen trying it out lol. I love Rice treats yummy

I like to add toffee chips to my Rice Krispie treats. The caramel chips are good too, but I can only find them around Christmas time.
I love the traditional treats, but we always add extra marshmallows to make them extra gooey and delicious. Yum!
