I’ve been trying to decrease my carb intake while increasing my protein intake, without raising my cholesterol, which is already high. I didn’t realize until recently that bison (often mistaken for buffalo) is lower in fat and cholesterol than beef (and other proteins also).
We received a cooler full of bison products from High Plains Bison, and at first, I really wondered if the taste would be nearly as good as beef. We started out with the bison hotdogs, and even my super-picky kids loved them. Then, we had the steaks, and they were equally as wonderful. The taste is a bit stronger, and it has to be cooked a bit differently (less heat, for a shorter period of time) than beef, but it’s really delicious!
