Tomatoes are one of my favorite summer foods -they taste great and are healthy and versatile. Every August and September, we get the most delicious native tomatoes here in Massachusetts, and incorporate them into lots of different meals. The most popular dish is this summer tomato salad, which is something that my husband grew up eating and passed on to our family. It’s easy to make, healthy, and paired with crusty bread, can be a full meal.
Here’s what you’ll need:
- 2 cucumbers
- 4 tomatoes
- Half of an onion (optional)
- 4 tablespoons of olive oil (we estimate this, based upon our preferences)
- 5 basil leaves
- Salt to taste
Chop the cucumbers, tomatoes, and onion into small cubes. Place in a non metal bowl and add the chopped basil leaves. Drizzle the olive oil over the top, adding more or less depending on your preferences. Add salt and refrigerate for about 15-20 minutes. Serve with crusty bread.
